Turkey Tortilla Lasagna

It was a miserable day out and we didn’t feel like bundling up and heading out.  I had no dinner plan.  This was made using ingredients I already had.  This was delicious, easy and not expensive to make.

Turkey Tortilla Lasagna

  • 1 tsp. olive oil
  • 500g ground turkey
  • 1 small onion, diced
  • 2 garlic cloves, minced
  • 5 large white mushrooms, chopped thin
  • 1 tsp. dried oregano
  • 2 tbsp. fresh basil
  • 1 jar tomato sauce
  • 2 tsp. brown sugar
  • 3 10-inch whole wheat tortillas
  • 3 cups baby spinach
  • 1 cup shredded mozzarella cheese
  • 1 cup shredded cheddar cheese

Preheat oven to 350 degrees.  Lightly grease a 9-inch pie plate.

Heat frying pan over medium heat.  Add oil, then turkey.  Cook, stirring often, breaking up the meat and cook until no longer pink.  Add onion, garlic, mushrooms and herbs.  Cook about 5 minutes, till the onion is soft.  Stir in the tomato sauce and brown sugar.  Simmer until sauce reduces slightly, about 5 minutes.

Place 1 tortilla on the bottom of the pie plate.  Spread 1 1/2 cups sauce over the tortilla.  Scatter 1 1/2 cups spinach, then 1/3 of EACH cheese overtop. Repeat another layer.

Bake, uncovered, until the cheese has melted, about 25 minutes.  Let it stand for 5 minutes before cutting.
